Description
A hearty and healthy twist on classic French onion soup with tender short ribs and melted Gruyère cheese.
Ingredients
- 2 lbs beef short ribs
- 4 large onions, thinly sliced
- 4 cups beef broth (low sodium)
- 2 cups water
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 sprigs fresh thyme
- 1 bay leaf
- 1 cup shredded Gruyère cheese
- 4 slices whole grain bread
Instructions
- Heat olive oil in a large pot. Brown short ribs on all sides. Remove and set aside.
- Add onions to the pot. Cook until caramelized (about 20 minutes).
- Return short ribs to pot. Add broth, water, salt, pepper, thyme, and bay leaf.
- Simmer covered for 2 hours until meat is tender.
- Remove short ribs. Shred meat and return to soup.
- Toast bread slices. Ladle soup into bowls. Top with bread and Gruyère.
- Broil until cheese melts (2-3 minutes). Serve hot.
Notes
- For deeper flavor, caramelize onions slowly
- Skim fat from broth for healthier option
- Substitute Swiss cheese if Gruyère unavailable
