Description

A hearty and healthy twist on classic French onion soup with tender short ribs and melted Gruyère cheese.


Ingredients

  • 2 lbs beef short ribs
  • 4 large onions, thinly sliced
  • 4 cups beef broth (low sodium)
  • 2 cups water
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 cup shredded Gruyère cheese
  • 4 slices whole grain bread


Instructions

  1. Heat olive oil in a large pot. Brown short ribs on all sides. Remove and set aside.
  2. Add onions to the pot. Cook until caramelized (about 20 minutes).
  3. Return short ribs to pot. Add broth, water, salt, pepper, thyme, and bay leaf.
  4. Simmer covered for 2 hours until meat is tender.
  5. Remove short ribs. Shred meat and return to soup.
  6. Toast bread slices. Ladle soup into bowls. Top with bread and Gruyère.
  7. Broil until cheese melts (2-3 minutes). Serve hot.

Notes

  • For deeper flavor, caramelize onions slowly
  • Skim fat from broth for healthier option
  • Substitute Swiss cheese if Gruyère unavailable
