Description
A hearty and nutritious soup inspired by traditional Polish golumpki.
Ingredients
- 1 medium head of cabbage
- 1 lb ground turkey
- 1 cup cooked rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes (15 oz)
- 2 tbsp tomato paste
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Remove the core from the cabbage and boil the whole head for 5-7 minutes until leaves are tender.
- In a large pot, sauté onion and garlic until softened.
- Add ground turkey and cook until browned.
- Stir in cooked rice, diced tomatoes, tomato paste, paprika, salt, and pepper.
- Fill each cabbage leaf with the mixture and roll tightly.
- Place filled cabbage rolls in the pot and cover with vegetable broth.
- Simmer for 30-40 minutes until flavors meld.
- Serve hot, garnished with fresh parsley.
Notes
- For a vegetarian version, use lentils instead of meat.
- Use any leftover filling in a salad or as a side dish.
