Description

A hearty and nutritious soup inspired by traditional Polish golumpki.


Ingredients

  • 1 medium head of cabbage
  • 1 lb ground turkey
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes (15 oz)
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Remove the core from the cabbage and boil the whole head for 5-7 minutes until leaves are tender.
  2. In a large pot, sauté onion and garlic until softened.
  3. Add ground turkey and cook until browned.
  4. Stir in cooked rice, diced tomatoes, tomato paste, paprika, salt, and pepper.
  5. Fill each cabbage leaf with the mixture and roll tightly.
  6. Place filled cabbage rolls in the pot and cover with vegetable broth.
  7. Simmer for 30-40 minutes until flavors meld.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a vegetarian version, use lentils instead of meat.
  • Use any leftover filling in a salad or as a side dish.
