Ingredients
- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups watermelon, cubed
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh mint leaves
- 1 tbsp honey
- 1 tbsp apple cider vinegar
Instructions
- Marinate chicken with olive oil, lemon juice, lemon zest, garlic, salt, and pepper for 30 minutes.
- Preheat grill to medium-high heat. Grill chicken for 6-7 minutes per side or until fully cooked.
- In a bowl, combine watermelon, cucumber, red onion, and mint.
- Whisk honey and apple cider vinegar together and drizzle over the salad.
