Description
A fresh and healthy grilled street corn salad with a creamy avocado dressing.
Ingredients
- 4 ears of corn
- 1 ripe avocado
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 cup chopped cilantro
- 1/2 cup diced red onion
- 1/2 cup cherry tomatoes, halved
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Preheat the grill to medium-high heat.
- Grill the corn for about 10 minutes, turning occasionally until charred.
- In a bowl, combine avocado, Greek yogurt, lime juice, chili powder, and salt. Mash until smooth.
- Cut the corn kernels off the cob and place them in a large bowl.
- Add diced red onion, cherry tomatoes, and cilantro to the corn.
- Mix in the avocado dressing until everything is well coated.
- Top with crumbled feta cheese if desired.
- Serve immediately or chill for 30 minutes before serving.
Notes
- Use fresh corn for the best flavor.
- Adjust the spice level by adding more or less chili powder.
- This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
