Description

A fresh and healthy grilled street corn salad with a creamy avocado dressing.


Ingredients

  • 4 ears of corn
  • 1 ripe avocado
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 cup chopped cilantro
  • 1/2 cup diced red onion
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese (optional)


Instructions

  1. Preheat the grill to medium-high heat.
  2. Grill the corn for about 10 minutes, turning occasionally until charred.
  3. In a bowl, combine avocado, Greek yogurt, lime juice, chili powder, and salt. Mash until smooth.
  4. Cut the corn kernels off the cob and place them in a large bowl.
  5. Add diced red onion, cherry tomatoes, and cilantro to the corn.
  6. Mix in the avocado dressing until everything is well coated.
  7. Top with crumbled feta cheese if desired.
  8. Serve immediately or chill for 30 minutes before serving.
