Ingredients
- 1 whole wheat flatbread
- 1/2 cup hummus
- 1/2 cup grilled bell peppers (sliced)
- 1/2 cup grilled zucchini (sliced)
- 1/4 cup red onion (thinly sliced)
- 1/4 cup baby spinach
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat grill or grill pan to medium-high heat.
- Toss bell peppers and zucchini with olive oil, salt, and black pepper.
- Grill vegetables for 3-4 minutes per side until tender.
- Spread hummus evenly over the flatbread.
- Layer grilled vegetables, red onion, and spinach on top.
- Roll the flatbread tightly into a wrap.
- Slice in half and serve immediately.
