Description
A warm and comforting soup made with turkey, spinach, and cheese tortellini, perfect for a healthy meal.
Ingredients
- 1 lb ground turkey
- 1 package (9 oz) cheese tortellini
- 4 cups fresh spinach
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Brown the ground turkey in a skillet over medium heat.
- Add the turkey, onion, carrots, celery, garlic, oregano, basil, salt, and pepper to the crockpot.
- Pour in the chicken broth and diced tomatoes.
- Cook on low for 6 hours or high for 3 hours.
- Add the tortellini and spinach in the last 30 minutes of cooking.
- Serve hot.
Notes
- You can use frozen tortellini if fresh isn’t available.
- Adjust seasoning to taste.
- Store leftovers in an airtight container for up to 3 days.
