Description

A warm and comforting soup made with turkey, spinach, and cheese tortellini, perfect for a healthy meal.


Ingredients

  • 1 lb ground turkey
  • 1 package (9 oz) cheese tortellini
  • 4 cups fresh spinach
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Brown the ground turkey in a skillet over medium heat.
  2. Add the turkey, onion, carrots, celery, garlic, oregano, basil, salt, and pepper to the crockpot.
  3. Pour in the chicken broth and diced tomatoes.
  4. Cook on low for 6 hours or high for 3 hours.
  5. Add the tortellini and spinach in the last 30 minutes of cooking.
  6. Serve hot.

Notes

  • You can use frozen tortellini if fresh isn’t available.
  • Adjust seasoning to taste.
  • Store leftovers in an airtight container for up to 3 days.
