Ingredients
- 1 lb flank steak
- 1 cup corn kernels
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- 1 lime, cut into wedges
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat grill to medium-high heat.
- Season steak with salt and black pepper.
- Grill steak for 5-7 minutes per side until desired doneness.
- Remove steak and let it rest for 5 minutes.
- Slice steak thinly against the grain.
- Grill corn kernels for 3-4 minutes until lightly charred.
- Warm tortillas on the grill for 30 seconds per side.
- Assemble tacos by placing steak, corn, lettuce, tomatoes, cilantro, and avocado on tortillas.
- Serve with lime wedges.
