Description
A fresh and nutritious Italian chopped salad packed with vegetables and a light dressing.
Ingredients
- 2 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/4 cup pepperoncini, sliced
- 1/2 cup chickpeas, drained and rinsed
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Wash and chop all vegetables.
- Combine lettuce, tomatoes, cucumber, red onion, olives, pepperoncini, and chickpeas in a large bowl.
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour dressing over the salad and toss gently.
- Sprinkle crumbled feta cheese on top.
- Serve immediately.
Notes
- Store leftovers in an airtight container for up to 2 days.
- Add grilled chicken or shrimp for extra protein.
- Use fresh herbs if available.
