Description
A simple and healthy side dish featuring roasted carrots glazed with honey and balsamic vinegar.
Ingredients
- 1 lb carrots, peeled and sliced
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp fresh thyme (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots with olive oil, salt, and pepper.
- Spread carrots on a baking sheet in a single layer.
- Roast for 20 minutes, flipping halfway.
- Mix honey and balsamic vinegar, then drizzle over carrots.
- Roast for another 5-10 minutes until tender.
- Garnish with fresh thyme if desired.
Notes
- Use thick carrots for even roasting.
- Adjust honey for sweetness preference.
- Store leftovers in an airtight container for up to 3 days.
