Ingredients

  • 2 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 avocado, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/2 cup grilled chicken, sliced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey
  • Salt and pepper to taste


Instructions

  1. Wash and dry all vegetables.
  2. Chop the cherry tomatoes, cucumber, and red onion.
  3. Slice the avocado and grilled chicken.
  4. In a large bowl, combine mixed greens, tomatoes, cucumber, red onion, avocado, and feta cheese.
  5. Top with grilled chicken.
  6. In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
  7. Drizzle the dressing over the salad and toss gently.
  8. Serve immediately.

Notes

  • For a vegan version, omit the feta cheese and grilled chicken.
