Ingredients
- 2 cups mixed greens
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/2 avocado, sliced
- 1/4 cup feta cheese, crumbled
- 1/2 cup grilled chicken, sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- Salt and pepper to taste
Instructions
- Wash and dry all vegetables.
- Chop the cherry tomatoes, cucumber, and red onion.
- Slice the avocado and grilled chicken.
- In a large bowl, combine mixed greens, tomatoes, cucumber, red onion, avocado, and feta cheese.
- Top with grilled chicken.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
- Drizzle the dressing over the salad and toss gently.
- Serve immediately.
Notes
- For a vegan version, omit the feta cheese and grilled chicken.
- Add nuts or seeds for extra crunch.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
