This Healthy Italian Grinder Salad is a fresh and vibrant chopped sub salad packed with vegetables, proteins, and Italian flavors.
Ingredients
- 1 cup romaine lettuce, chopped
- 1 cup radicchio, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup salami, diced
- 1/2 cup turkey, diced
- 1/4 cup provolone cheese, cubed
- 1/4 cup olives, sliced
- 1/4 cup Italian dressing
Instructions
- In a large bowl, combine the chopped romaine, radicchio, cherry tomatoes, cucumber, bell pepper, and red onion.
- Add the diced salami, turkey, provolone cheese, and olives to the bowl.
- Drizzle the Italian dressing over the salad.
- Toss the salad until all ingredients are well mixed.
- Serve immediately or refrigerate for 30 minutes for flavors to meld.
