Description
A light and nutritious soup made with lemon, chicken, orzo, and fresh dill.
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup orzo pasta
- 2 cups cooked chicken, shredded
- 1 lemon, juiced and zested
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Add garlic and cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add orzo and cook according to package instructions.
- Stir in cooked chicken, lemon juice, lemon zest, and dill.
- Season with salt and pepper.
- Serve warm.

- This soup can be stored in the refrigerator for up to 3 days.
- You can add more vegetables like spinach or peas if desired.
