A nutritious and flavorful Southwest-inspired salad perfect for meal prep. Packed with fresh vegetables, lean protein, and zesty dressing.


Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup cooked quinoa
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn kernels
  • 1 diced red bell pepper
  • 1/2 cup diced red onion
  • 1 diced avocado
  • 1/4 cup chopped cilantro
  • 6 oz grilled chicken breast (diced)
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup Greek yogurt
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste


Instructions

  1. Cook quinoa according to package instructions and let cool
  2. Mix Greek yogurt, lime juice, cumin, chili powder, salt, and pepper to make dressing
  3. Combine all salad ingredients in large bowl
  4. Add dressing and toss gently
  5. Divide into 4 meal-prep containers
  6. Store in refrigerator for up to 4 days

Notes

  • For vegetarian version, omit chicken
  • Add jalapeños for extra heat
  • Dressing thickens when chilled – stir before serving
  • Avocado may brown slightly – add fresh before eating
