Description

A healthy low-carb meal featuring chicken, peppers, and spices cooked in a crockpot.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup chicken broth


Instructions

  1. Place the chicken breasts in the crockpot.
  2. Add sliced peppers, onion, and garlic on top of the chicken.
  3. Sprinkle chili powder, cumin, paprika, salt, and pepper over the mixture.
  4. Pour chicken broth into the crockpot.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, shred the chicken with two forks and mix with the veggies.
  7. Serve in bowls and enjoy.
