Description
A healthy low-carb meal featuring chicken, peppers, and spices cooked in a crockpot.
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup chicken broth
Instructions
- Place the chicken breasts in the crockpot.
- Add sliced peppers, onion, and garlic on top of the chicken.
- Sprinkle chili powder, cumin, paprika, salt, and pepper over the mixture.
- Pour chicken broth into the crockpot.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix with the veggies.
- Serve in bowls and enjoy.

- Adjust spice levels to your preference.
- Serve with avocado or cheese if desired.
- Can be stored in the fridge for up to 4 days.
