Description

A healthy, low-carb version of classic French onion soup, packed with flavor and easy to make.


Ingredients

  • 4 large onions, thinly sliced
  • 2 tbsp olive oil
  • 4 cups beef or vegetable broth
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup shredded Gruyère or Swiss cheese


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onions and cook until caramelized, about 20 minutes.
  3. Pour in broth, add thyme and bay leaf, and simmer for 15 minutes.
  4. Season with salt and pepper.
  5. Preheat the broiler.
  6. Ladle soup into oven-safe bowls, top with cheese, and broil until melted and bubbly.
