Description
A healthy, low-carb version of classic French onion soup, packed with flavor and easy to make.
Ingredients
- 4 large onions, thinly sliced
- 2 tbsp olive oil
- 4 cups beef or vegetable broth
- 1 tsp thyme
- 1 bay leaf
- Salt and pepper to taste
- 1 cup shredded Gruyère or Swiss cheese
Instructions
- Heat olive oil in a pot over medium heat.
- Add onions and cook until caramelized, about 20 minutes.
- Pour in broth, add thyme and bay leaf, and simmer for 15 minutes.
- Season with salt and pepper.
- Preheat the broiler.
- Ladle soup into oven-safe bowls, top with cheese, and broil until melted and bubbly.
- Serve hot.
Notes
- Use a mandoline for even onion slices.
- For extra depth, deglaze the pot with a splash of dry white wine.
- Store leftovers in the fridge for up to 3 days.
