Description

A light and nutritious noodle bowl with a flavorful miso ginger dressing.


Ingredients

  • 200g soba noodles
  • 2 tbsp white miso paste
  • 1 tbsp grated ginger
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 2 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 clove garlic, minced
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1/2 cup edamame
  • 2 tbsp sesame seeds
  • 1/4 cup chopped green onions


Instructions

  1. Cook soba noodles according to package instructions. Drain and rinse under cold water.
  2. In a bowl, whisk together miso paste, ginger, rice vinegar, honey, sesame oil, soy sauce, and garlic.
  3. Toss the cooked noodles with the dressing.
  4. Top with carrots, cucumber, edamame, sesame seeds, and green onions.
  5. Serve chilled or at room temperature.
