Ingredients

  • 1 cup cooked quinoa
  • 1 grilled chicken breast (150g)
  • 1/2 avocado, sliced
  • 1/2 cup steamed broccoli
  • 1/4 cup cherry tomatoes, halved
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt and pepper to taste


Instructions

  1. Cook quinoa according to package instructions.
  2. Grill chicken breast until fully cooked (165°F internal temperature).
  3. Steam broccoli for 3-4 minutes until tender.
  4. Slice avocado and halve cherry tomatoes.
  5. Combine quinoa, chicken, avocado, broccoli, and tomatoes in a bowl.
  6. Drizzle with olive oil and lemon juice.
  7. Season with salt and pepper.
  8. Mix gently and serve.
