Description
A nourishing and healthy coconut tofu soup that combines creamy coconut milk with protein-rich tofu and fresh vegetables.
Ingredients
- 1 block (14 oz) firm tofu, cubed
- 1 can (13.5 oz) coconut milk
- 2 cups vegetable broth
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 1 carrot, sliced
- 1 bell pepper, diced
- 1 cup mushrooms, sliced
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp olive oil
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a pot over medium heat.
- Add ginger and garlic, sauté for 1 minute.
- Add carrots, bell pepper, and mushrooms. Cook for 3-4 minutes.
- Pour in coconut milk and vegetable broth. Bring to a simmer.
- Add tofu cubes, soy sauce, and lime juice. Simmer for 10 minutes.
- Garnish with fresh cilantro before serving.
Notes
- Use full-fat coconut milk for a creamier texture.
- Adjust soy sauce and lime juice to taste.
- Add chili flakes for extra spice.
