Ingredients

  • 1 block (14 oz) firm tofu, cubed
  • 1 can (13.5 oz) coconut milk
  • 2 cups vegetable broth
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 1 carrot, sliced
  • 1 bell pepper, diced
  • 1 cup mushrooms, sliced
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • Fresh cilantro for garnish


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add ginger and garlic, sauté for 1 minute.
  3. Add carrots, bell pepper, and mushrooms. Cook for 3-4 minutes.
  4. Pour in coconut milk and vegetable broth. Bring to a simmer.
  5. Add tofu cubes, soy sauce, and lime juice. Simmer for 10 minutes.
  6. Garnish with fresh cilantro before serving.
