Ingredients
- 4 boneless, skinless chicken breasts
- 1 lb baby potatoes, halved
- 1 lb green beans, trimmed
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1 tbsp dried rosemary
- 1 tbsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with 1 tbsp olive oil, half the garlic, rosemary, thyme, salt, and pepper.
- Spread potatoes on a baking sheet and roast for 15 minutes.
- Rub chicken with remaining olive oil, garlic, and spices.
- Add chicken and green beans to the baking sheet with potatoes.
- Roast for 25 minutes until chicken reaches 165°F (74°C).
- Serve immediately.
