Ingredients

  • 1 cup corn kernels

  • 1/2 cup Greek yogurt
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste


Instructions

  1. Cut cornbread into cubes and set aside.
  2. In a bowl, mix black beans, corn, bell pepper, red onion, and cherry tomatoes.
  3. In another bowl, whisk Greek yogurt, lime juice, cumin, cilantro, salt, and pepper.
  4. Layer cornbread cubes in a dish.

  6. Chill for 30 minutes before serving.
