Ingredients

- 2 cups cornbread, cubed
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup Greek yogurt
- 2 tbsp lime juice
- 1 tsp cumin
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Cut cornbread into cubes and set aside.
- In a bowl, mix black beans, corn, bell pepper, red onion, and cherry tomatoes.
- In another bowl, whisk Greek yogurt, lime juice, cumin, cilantro, salt, and pepper.
- Layer cornbread cubes in a dish.
- Top with vegetable mixture and drizzle dressing over it.
- Chill for 30 minutes before serving.

- Use day-old cornbread for better texture.
- Drain vegetables well to avoid soggy salad.
