Description

A healthy and easy recipe for chicken and rice made in a crockpot.


Ingredients

  • 2 cups of brown rice
  • 4 boneless chicken breasts
  • 1 can of diced tomatoes
  • 1 cup of chicken broth
  • 1 cup of diced bell peppers
  • 1 cup of chopped onions
  • 2 cloves of garlic, minced
  • 1 teaspoon of paprika
  • Salt and pepper to taste


Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add brown rice on top of the chicken.
  3. Pour in the diced tomatoes and chicken broth.
  4. Add bell peppers, onions, garlic, paprika, salt, and pepper.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Check if chicken is cooked through and rice is tender.
  7. Shred chicken and mix everything together before serving.

  • Use low-sodium chicken broth for a healthier option.
  • Vegetables can be adjusted based on preference.
  • Store leftovers in an airtight container in the fridge.
