Description
A fast and nutritious Mediterranean chickpea salad packed with protein and fresh vegetables.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup kalamata olives, pitted and sliced
- 2 tbsp fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions
- Combine chickpeas, tomatoes, cucumber, red onion, olives, and parsley in a large bowl.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the salad and toss to coat evenly.
- Serve immediately or refrigerate for up to 2 days.
Notes
- Add crumbled feta cheese for extra flavor if desired.
- Use fresh lemon juice for the best taste.
- This salad tastes better after chilling for an hour.
