Description
A simple lentil soup made with pantry staples. It is healthy, quick to prepare, and perfect for meal prep.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 cup brown lentils, rinsed
- 6 cups vegetable broth
- 1 (14.5 oz) can diced tomatoes
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Add garlic and cook for 1 minute.
- Stir in lentils, vegetable broth, diced tomatoes, and thyme.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper before serving.
Notes
- Store soup in an airtight container for up to 5 days.
- Freeze soup for up to 3 months.
- Add a squeeze of lemon juice before serving for extra flavor.
