Description

Ingredients

  • 4 large carrots, peeled and chopped
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 1 tablespoon lemon juice


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the chopped carrots with olive oil, salt, and pepper.
  3. Spread the carrots on a baking sheet and roast for 25-30 minutes until tender.
  4. In a pot, sauté the onion and garlic until soft.
  5. Add the grated ginger and cook for another minute.
  6. Add the roasted carrots and vegetable broth to the pot.
  7. Bring to a boil, then simmer for 10 minutes.
  8. Use an immersion blender to puree the soup until smooth.
  9. Stir in lemon juice and adjust seasoning as needed.
