A nutritious and flavorful salmon rice bowl packed with healthy ingredients.
Ingredients
- 1 cup brown rice
- 2 cups water
- 2 salmon fillets (6 oz each)
- 1 tablespoon olive oil
- 1 avocado, sliced
- 1 cup spinach
- 1/2 cucumber, sliced
- 1 tablespoon soy sauce
- 1 teaspoon sesame seeds
Instructions
- Rinse the brown rice under cold water.
- In a pot, combine rice and water. Bring to a boil.
- Reduce heat, cover, and simmer for 45 minutes.
- While rice cooks, heat olive oil in a pan over medium heat.
- Add salmon fillets, cooking for 4-5 minutes on each side until cooked through.
- Remove salmon and let it rest.
- Once rice is cooked, fluff with a fork.
- In a bowl, layer rice, spinach, cucumber, and avocado.
- Place salmon on top and drizzle with soy sauce.
- Sprinkle sesame seeds before serving.
Notes
- Feel free to add other vegetables.
- Can substitute salmon with chicken or tofu.
