Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 2 salmon fillets (6 oz each)
  • 1 tablespoon olive oil
  • 1 avocado, sliced
  • 1 cup spinach
  • 1/2 cucumber, sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame seeds


Instructions

  1. Rinse the brown rice under cold water.
  2. In a pot, combine rice and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 45 minutes.
  4. While rice cooks, heat olive oil in a pan over medium heat.
  5. Add salmon fillets, cooking for 4-5 minutes on each side until cooked through.
  6. Remove salmon and let it rest.
  7. Once rice is cooked, fluff with a fork.
  8. In a bowl, layer rice, spinach, cucumber, and avocado.
  9. Place salmon on top and drizzle with soy sauce.
  10. Sprinkle sesame seeds before serving.
