Description
A quick and healthy meal combining lean beef and shrimp with fresh vegetables, all cooked on one sheet pan for easy cleanup.
Ingredients
- 1 lb lean beef, thinly sliced
- 1 lb shrimp, peeled and deveined
- 1 bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 8 small whole wheat tortillas
- 1 avocado, sliced
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Preheat oven to 400°F (200°C).
- Toss beef, shrimp, bell pepper, and onion with olive oil, chili powder, cumin, garlic powder, and salt.
- Spread evenly on a sheet pan.
- Bake for 12-15 minutes until shrimp is pink and beef is cooked.
- Warm tortillas in the oven for 1-2 minutes.
- Divide the mixture among tortillas.
- Top with avocado slices and cilantro.
- Serve with lime wedges.
Notes
- Use any preferred protein like chicken or tofu.
- Adjust spices to taste.
- For extra heat, add a pinch of cayenne pepper.
