Description

A quick and healthy meal combining lean beef and shrimp with fresh vegetables, all cooked on one sheet pan for easy cleanup.


Ingredients

  • 1 lb lean beef, thinly sliced
  • 1 lb shrimp, peeled and deveined
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 8 small whole wheat tortillas
  • 1 avocado, sliced
  • Fresh cilantro for garnish
  • Lime wedges for serving


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss beef, shrimp, bell pepper, and onion with olive oil, chili powder, cumin, garlic powder, and salt.
  3. Spread evenly on a sheet pan.
  4. Bake for 12-15 minutes until shrimp is pink and beef is cooked.
  5. Warm tortillas in the oven for 1-2 minutes.
  6. Divide the mixture among tortillas.
  7. Top with avocado slices and cilantro.
  8. Serve with lime wedges.
