Description
A hearty and healthy beef taco soup made in the slow cooker. Whole30 compliant and packed with flavor.
Ingredients
- 1 lb lean ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes (14.5 oz)
- 1 can tomato sauce (8 oz)
- 2 cups beef broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Brown ground beef in a skillet over medium heat.
- Add onion, garlic, and bell pepper. Cook until softened.
- Transfer mixture to slow cooker.
- Add remaining ingredients to slow cooker.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Serve hot with desired toppings.
Notes
- Store leftovers in airtight container for up to 4 days.
- Freeze for up to 3 months.
- Top with avocado, cilantro, or lime wedges.
