Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1 bell pepper, diced
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large bowl, combine chickpeas, black beans, tomatoes, red onion, bell pepper, and avocado.
- In a small bowl, whisk lime juice, olive oil, cumin, salt, and black pepper.
- Pour dressing over the salad and toss gently to coat.
- Add cilantro and mix well.
- Serve chilled or at room temperature.

- For extra flavor, let the salad sit for 30 minutes before serving.
