Description
A refreshing and spicy cucumber salad with a satisfying crunch. Perfect as a side dish or light snack.
Ingredients
- 2 medium cucumbers
- 1 tsp salt
- 2 cloves garlic (minced)
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp chili flakes
- 1 tsp sugar
Instructions
- Wash cucumbers and smash them with the flat side of a knife
- Cut into bite-sized pieces
- Toss with salt and let sit for 10 minutes
- Drain excess liquid
- Mix garlic, vinegar, sesame oil, chili flakes and sugar in a bowl
- Pour dressing over cucumbers and toss
- Serve immediately or chill for 30 minutes
Notes
- Use English cucumbers for best texture
- Adjust chili amount to taste
- Can substitute honey for sugar
