Description

A refreshing and spicy cucumber salad with a satisfying crunch. Perfect as a side dish or light snack.


Ingredients

  • 2 medium cucumbers
  • 1 tsp salt
  • 2 cloves garlic (minced)
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp chili flakes
  • 1 tsp sugar


Instructions

  1. Wash cucumbers and smash them with the flat side of a knife
  2. Cut into bite-sized pieces
  3. Toss with salt and let sit for 10 minutes
  4. Drain excess liquid
  5. Mix garlic, vinegar, sesame oil, chili flakes and sugar in a bowl
  6. Pour dressing over cucumbers and toss
  7. Serve immediately or chill for 30 minutes

Notes

  • Use English cucumbers for best texture
  • Adjust chili amount to taste
  • Can substitute honey for sugar
