Description
Crispy and healthy sweet potato falafel bites made with just five simple ingredients. These are perfect for a quick snack or appetizer.
Ingredients
- 1 large sweet potato, peeled and diced
- 1 can chickpeas, drained and rinsed
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Preheat oven to 375°F (190°C).
- Boil sweet potato until tender, then mash.
- Mix mashed sweet potato, chickpeas, garlic, cumin, and salt in a bowl.
- Form mixture into small balls and place on a baking sheet.
- Brush with olive oil and bake for 20-25 minutes until crispy.
Notes
- For extra crispiness, broil for 1-2 minutes after baking.
- Store leftovers in an airtight container for up to 3 days.
- Serve with tahini or yogurt dip.
