Description

Crispy and healthy sweet potato falafel bites made with just five simple ingredients. These are perfect for a quick snack or appetizer.


Ingredients

  • 1 large sweet potato, peeled and diced
  • 1 can chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 tablespoon olive oil
  • Salt to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil sweet potato until tender, then mash.
  3. Mix mashed sweet potato, chickpeas, garlic, cumin, and salt in a bowl.
  4. Form mixture into small balls and place on a baking sheet.
  5. Brush with olive oil and bake for 20-25 minutes until crispy.
