Description

Quick and nutritious Thai-inspired wraps packed with fresh vegetables and a creamy peanut sauce. No cooking required.


Ingredients

  • 4 large whole wheat tortillas
  • 1 cup shredded carrots
  • 1 cup thinly sliced red bell pepper
  • 1 cup thinly sliced cucumber
  • 1 cup shredded purple cabbage
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup creamy peanut butter
  • 2 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 2 tbsp water


Instructions

  1. Whisk together peanut butter, lime juice, soy sauce, honey, ginger, garlic, and water to make the sauce.
  2. Lay tortillas flat on a clean surface.
  3. Spread 1-2 tablespoons of sauce evenly over each tortilla.
  4. Layer vegetables evenly across the center of each tortilla.
  5. Roll tortillas tightly, tucking in the sides as you go.
  6. Slice each wrap in half diagonally.
  7. Serve immediately or wrap in parchment paper for later.
