Quick and nutritious Thai-inspired wraps packed with fresh vegetables and a creamy peanut sauce. No cooking required.
Ingredients
- 4 large whole wheat tortillas
- 1 cup shredded carrots
- 1 cup thinly sliced red bell pepper
- 1 cup thinly sliced cucumber
- 1 cup shredded purple cabbage
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1/4 cup creamy peanut butter
- 2 tbsp lime juice
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp grated ginger
- 1 clove garlic, minced
- 2 tbsp water
Instructions
- Whisk together peanut butter, lime juice, soy sauce, honey, ginger, garlic, and water to make the sauce.
- Lay tortillas flat on a clean surface.
- Spread 1-2 tablespoons of sauce evenly over each tortilla.
- Layer vegetables evenly across the center of each tortilla.
- Roll tortillas tightly, tucking in the sides as you go.
- Slice each wrap in half diagonally.
- Serve immediately or wrap in parchment paper for later.

- Add cooked chicken or tofu for extra protein
