Description
These cookies combine the sweetness of pineapple and coconut for a tropical treat.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup shredded coconut
- 1/2 cup crushed pineapple, drained
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter, brown sugar, and granulated sugar.
- Add the egg and vanilla extract, mixing well.
- In another bowl, combine the flour, baking soda, salt, and shredded coconut.
- Gradually add the dry ingredients to the wet mixture.
- Fold in the crushed pineapple.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Let cool before serving.
Notes
- Store cookies in an airtight container.
- Can substitute coconut with nuts if desired.
