Ingredients
- 4 medium red onions, peeled and quartered
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp fresh thyme leaves (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss onion quarters with olive oil, salt, and pepper in a bowl.
- Spread onions on a baking sheet in a single layer.
- Roast for 30 minutes, flipping halfway.
- Whisk balsamic vinegar and honey in a small bowl.
- Drizzle glaze over onions and roast for 10 more minutes.
- Sprinkle with thyme before serving.

- Use apple cider vinegar for a milder taste.
- Store leftovers in an airtight container for up to 3 days.
