Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 pound ground beef
  • 1 cup cottage cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place diced sweet potatoes on a baking sheet and drizzle with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Bake for 25-30 minutes until tender.
