Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 pound ground beef
- 1 cup cottage cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Place diced sweet potatoes on a baking sheet and drizzle with olive oil, garlic powder, onion powder, salt, and pepper.
- Bake for 25-30 minutes until tender.
- While sweet potatoes bake, cook ground beef in a skillet over medium heat until browned.
- Season the ground beef with salt and pepper.
- Once sweet potatoes are done, combine them with the cooked ground beef.
- Serve the mixture in a bowl topped with cottage cheese and garnish with fresh parsley.
