Description
A simple and healthy twist on traditional cheesecake using yogurt.
Ingredients
- 2 cups Greek yogurt
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1/4 cup lemon juice
- 1/2 cup graham cracker crumbs
- 1/4 cup melted coconut oil
- Fresh berries for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix Greek yogurt, honey, vanilla extract, and lemon juice until smooth.
- In another bowl, combine graham cracker crumbs and melted coconut oil.
- Press the graham cracker mixture into the bottom of a springform pan.
- Pour the yogurt mixture over the crust.
- Bake for 25-30 minutes or until set.
- Let it cool and refrigerate for at least 2 hours.
- Top with fresh berries before serving.
Notes
- Use low-fat yogurt for a lighter version.
- Adjust sweetness by adding more or less honey.
- Experiment with different toppings like nuts or chocolate.
