Description

A simple and healthy twist on traditional cheesecake using yogurt.


Ingredients

  • 2 cups Greek yogurt
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • 1/2 cup graham cracker crumbs
  • 1/4 cup melted coconut oil
  • Fresh berries for topping


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix Greek yogurt, honey, vanilla extract, and lemon juice until smooth.
  3. In another bowl, combine graham cracker crumbs and melted coconut oil.
  4. Press the graham cracker mixture into the bottom of a springform pan.
  5. Pour the yogurt mixture over the crust.
  6. Bake for 25-30 minutes or until set.
  7. Let it cool and refrigerate for at least 2 hours.
  8. Top with fresh berries before serving.
