Description
A nutritious and flavorful salad featuring wild rice, dried cranberries, and nuts.
Ingredients
- 1 cup wild rice
- 2 cups water
- 1/2 cup dried cranberries
- 1/4 cup chopped walnuts
- 1/4 cup chopped pecans
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Rinse wild rice under cold water.
- Cook rice in 2 cups water for 45 minutes or until tender.
- Drain excess water and let rice cool.
- Mix cranberries, walnuts, and pecans in a bowl.
- Add cooled rice to the bowl.
- Drizzle olive oil and lemon juice over the mixture.
- Season with salt and pepper.
- Toss gently and serve.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Substitute almonds for walnuts or pecans if preferred.
