Description
A fresh and healthy meal featuring za’atar-spiced shredded tofu wrapped in crisp cabbage leaves.
Ingredients
- 1 block firm tofu, shredded
- 2 tbsp za’atar seasoning
- 1 tbsp olive oil
- 8 large cabbage leaves
- 1 cup shredded carrots
- 1/2 cup chopped fresh parsley
- 1 lemon, juiced
- Salt to taste
Instructions
- Shred the tofu and mix with za’atar, olive oil, and salt.
- Blanch cabbage leaves in boiling water for 30 seconds, then drain.
- Fill each cabbage leaf with tofu mixture, carrots, and parsley.
- Drizzle with lemon juice and wrap tightly.
- Serve immediately or chill before eating.
Notes
- Use savoy cabbage for easier wrapping.
- Add hummus or tahini sauce for extra flavor.
- Wrap leftovers tightly; they keep for two days.
