Description
A creamy and comforting soup with tender chicken, wild rice, and vegetables.
Ingredients
- 2 tbsp butter
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onions
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 cup wild rice
- 2 cups cooked chicken, shredded
- 1 cup heavy cream
- 1 tsp thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Melt butter in a large pot over medium heat.
- Add carrots, celery, onions, and garlic. Cook for 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add wild rice and reduce heat. Simmer for 40 minutes.
- Stir in shredded chicken, heavy cream, thyme, salt, and pepper.
- Cook for another 10 minutes until heated through.
- Serve hot.
Notes
- Use rotisserie chicken for easy prep.
- Store leftovers in the fridge for up to 3 days.
