Description

A creamy and comforting soup with tender chicken, wild rice, and vegetables.


Ingredients

  • 2 tbsp butter
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onions
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 cup wild rice
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add carrots, celery, onions, and garlic. Cook for 5 minutes.
  3. Pour in chicken broth and bring to a boil.
  4. Add wild rice and reduce heat. Simmer for 40 minutes.
  5. Stir in shredded chicken, heavy cream, thyme, salt, and pepper.
  6. Cook for another 10 minutes until heated through.
  7. Serve hot.
