Description
A simple and flavorful Provencal-style chicken and potatoes dish made effortlessly in your crockpot.
Ingredients
- 4 bone-in chicken thighs
- 4 medium potatoes, quartered
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup chicken broth
- 1/4 cup white wine (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Brown chicken thighs for 3 minutes per side.
- Place potatoes and onion in the crockpot.
- Add browned chicken on top of the vegetables.
- Sprinkle garlic, thyme, rosemary, oregano, salt, and pepper over the chicken.
- Pour chicken broth and white wine (if using) over everything.
- Cover and cook on low for 6 hours.
- Serve hot.
Notes
- Skin-on chicken thighs work best for flavor.
- For crispy skin, broil cooked chicken for 2-3 minutes before serving.
- Add olives or sun-dried tomatoes for extra Provencal flavor.
