Description

A simple and flavorful Provencal-style chicken and potatoes dish made effortlessly in your crockpot.


Ingredients

  • 4 bone-in chicken thighs
  • 4 medium potatoes, quartered
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup chicken broth
  • 1/4 cup white wine (optional)


Instructions

  1. Heat olive oil in a skillet over medium heat. Brown chicken thighs for 3 minutes per side.
  2. Place potatoes and onion in the crockpot.
  3. Add browned chicken on top of the vegetables.
  4. Sprinkle garlic, thyme, rosemary, oregano, salt, and pepper over the chicken.
  5. Pour chicken broth and white wine (if using) over everything.
  6. Cover and cook on low for 6 hours.
  7. Serve hot.
