Ingredients
- 1 medium sweet potato, diced
- 2 eggs
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1 tbsp chopped fresh parsley
Instructions
- Heat olive oil in a pan over medium heat.
- Add diced sweet potato and cook for 8 minutes until tender.
- Push sweet potatoes to one side of the pan.
- Crack eggs into the empty space and scramble until cooked.
- Mix everything together and season with salt, pepper, and paprika.
- Garnish with fresh parsley before serving.
