Description
A healthy twist on classic bruschetta, this dip combines fresh tomatoes and three cheeses for a flavorful appetizer.
Ingredients
- 2 cups diced tomatoes
- 1/2 cup shredded mozzarella
- 1/4 cup grated parmesan
- 1/4 cup crumbled feta
- 2 cloves minced garlic
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- 1/4 cup chopped fresh basil
- 1/4 tsp black pepper
- 1 whole grain baguette
Instructions
- Preheat oven to 375°F
- Mix tomatoes, cheeses, garlic, oil, vinegar, basil and pepper in bowl
- Slice baguette into 1/2-inch pieces
- Spread mixture evenly in baking dish
- Bake for 15 minutes until bubbly
- Serve warm with baguette slices
Notes
- Use ripe tomatoes for best flavor
- Can substitute whole wheat pita chips for baguette
- Refrigerate leftovers for up to 3 days
